Skordalia (Potato Garlic Spread)

Ingredients:
- 6 cloves of garlic
- 1-1/2 teaspoons salt
- 2-1/2 pounds potatoes, peeled, cooked, and mashed
- Juice of 3 lemons
- 1-1/2 cups olive oil
Instructions:
Mash garlic and salt into a paste. Blend with potatoes. Alternately add lemon juice and olive oil to make a thick smooth paste. Serve with crusty bread, fish, vegetables, etc.Note:
