Creamy Cheesy Grits with Spicy Shrimp
yield: 8 to 10 servings
Ingredients:
Grits:
- 1 clove garlic, minced
- 1 stick butter
- 2 cups instant grits
- 2 quarts water
- Salt and pepper, to taste
- 1 teaspoon Tabasco sauce, or more to taste
- 2 teaspoons Worcestershire sauce
- 10 ounces grated cheddar
- 1/2 cup Half and Half
Easy Spicy Shrimp:
- 4 tablespoons butter
- 2 tablespoons Gullah Love or other Cajun
- spice mixture, or more to taste
- Pinch of cayenne pepper
- 2 pounds shrimp, 26-30 per pound, peeled and deveined
- 2 14-ounce cans recipe-ready diced tomatoes with garlic
Instructions:
Grits:
Melt the butter in a large ovenproof pan. Sauté the garlic for a minute. Stir in the water, salt, pepper, Tabasco, and Worcestershire sauces. Bring to a boil and slowly stir in the grits. Lower the heat and cook about 5 minutes more until thickened. Stir in 8 ounces of the cheese and the Half and Half. Top with the remaining cheese and bake in a preheated 350 degree oven for about 20 minutes while you make the shrimp. Serve spoonfuls of grits topped with the shrimp.
Easy Spicy Shrimp:
Melt the butter in a sauté pan. Stir in the spice mixture and sauté the shrimp in batches until just cooked through. Stir in the tomatoes and simmer until heated through. Adjust the seasoning to taste.
